About our introductory articles

Since 1862, Kankyo Brewery Company has just brewed and produced mirin and sake in Aichi Prefecture. Among their products, the best mirin is Mukashi Jikomi Hon Mirin; means mirin brewed in a way unchanged since old time. It is clearly true mirin made from glutinous rice, rice-malt and shochu group Otsu.

Mirin is a popular seasoning in Japan, which concludes some sweetness and alcohol. Mirinis so often used not only in usual families in Japan but also in Japanese-style restaurants and so on, because it has a great polishing effect on making teriyaki and a great breaking-prevention effect on making stewed food. Since the sweetness, some use mirin as sweet sustenance.

You can get as something to drink, Mukashi Jikomi Hon Mirin held in storage for over two years. Essence of mirin is determined not just by ingredients but also by storing time. Mirin, which was stored for a short time, often tastes not good and has little effect in spite of its heavy consumption. To put it the other way, long-time stored mirin can have a great effect in spite of being used a little.

Recently, we have often found mirin-like seasonings as mirin including distilled alcohol. But Mukashi Jikomi Hon Mirin is, as the name, a real thing brewed in an old and original way. At any cost, we would like you to know and feel its effects and the taste of a real thing.
