Since 1860, Kato Kichibee Shouten has brewed and developed Japanese sake in Fukui Prefecture. They are a right brewery: they have used perfectly additive-free rice for brewing all of their Japanese sake. And they are the first brewery which named sake Gin Jo.

In 1920’s, they have already established themselves as a great brewery to let their product used at the state ceremony for Emperor Showa. Even now, their products are often used at domestic and foreign ceremonies like a dinner party celebrating the World Cup Japan/Korea and are highly praised by many domestic and foreign VIPs.

All products brewed by Kato Kichibee Shouten are named BORN such and such. BORN means Japanese sake brewed by Kato Kichibee Shouten. Among their products, it is not too much to say that BORN Cho Gin is the greatest sake. It has been presented to the Imperial House.

The bottle of graceful Venetian blue black, printed Imperial chrysanthemum crest, two phoenixes making a pair and supporting a ball, each of them makes a seer feel the pride as a representative of Japanese sake.

As malted rice, they have used Yamada nishiki; it is famous as rice good for making sake because of its largeness, smallness of protein and high water absorbency. The rice-polishing ratio of BORN Cho Gin is 20%. The ratio shows how much rice is polished to make it better. The lower the number is, the more polished rice is. So they polish 80 percent of Yamada nishiki.

Employed is their perfectly original yeast and underground water extracted from a depth of 184 meters. Moreover, it is put to age for five years. That makes its taste very clear and smoothly but refined, and it lets you very impressed.

It is difficult to get and expensive. But by any means, let your mouth taste it once in your whole life.
