Zwilling is a kitchenware company established in Solingen, Germany since 1731. They decided to build their factory in Seki after several visits because they found some common term between Seki and Solingen. Among the same company, however, there is a clear difference between Germany and Japan. In their German factory, men are seldom found but instead robots play active parts, although we can find a lot of mankind in the Seki factory.

Niwa People may guess factories put the facilities first, though our factory isn't so. We are stubbornly based on artisans. Then, they are treasured very much.



Welfare, resting and health maintenance, they are very important when we immortals belong to the jobs. As mentioned in the last page, optimization has improved these elements. Our mind needs to get fulfillment, moreover. The more they can get satisfied in working, the sweeter their fruits become.

Niwa Actually, we have got some letters to speak well of our craftsmanship from customers, which cheers us up. Some have made complaints. It makes us feel down and try more.


It is very difficult to define what the good kitchen knife is. Actual tries only tell you what Zwilling’s ones are really, then. Therefore, the artisans have to face a continuous process of trial and error because they are heading for an unidentified definition “Good Kitchen Knives.” “Niwa Megumi is one of the best artisans in this factory. It means she also belongs to the top class in the world” said the director as mentioned before. That female craftsman cannot be exceptional.

Niwa I am sure I am not a perfect craftsman. I have cried because of the kitchen knives out from my expectation. If the goal was 10, I am supposed to be at 5 now. Needless to say, there are no problems on quality of our kitchen knives, because we have a lot of tests through the processing. In “Blade Edging” I belong to, however, I believe I can do more.



We are usually said to use hippocampus inside our brains when memorize English words and chronology. It is said, on the other hand, neurone network between the cerebellum and the basal ganglia works for memorizing by our bodies, like learning swimming methods. Artisans use their bodies like hands and eyes. So the latter is more important to them.

Brains form our life. Niwa Megumi has engrossedly devoted herself to “Blade Edging” since her entrance. The technique is deeply weaved within her body and brain. She, therefore, must have felt some feedback in her private life. What did she get as nature of a “Blade Edging” artisan in daily life?


Niwa I use the Twinfin, a kind of our Zwilling kitchen knives in my private cooking. Those blades are in conjunction with the handles. I have tiny hands and then, am hard to use large or heavy knives. I, however, can easily do the Twinfin.


The Twinfin are light knives also for beginners.

Niwa Usually, gripping those knives makes us feel kind of cool in winter morning. However, I don’t care because always bask in cold water for “Blade Edging” regardless of what season it is. My hands are artisan’s ones? Well, maybe so.



“If the goal was 10, I am supposed to be at 5 now” said Niwa. Namely, her career does not finish yet and still has a space enough. By the craftsman's hands, what will she write upon the blank? I can declare the answer is included within future of Zwilling's kitchen knives.
