Kochikame, it is a manga which holds the longest running record as boys’ manga in Japan and Ryotsu Kankichi has acted its main role from the beginning. In a story, he redecorated a wasted public lavatory in a park and secretly brewed sake to sell on mail order. You can read the tale in jump comics vol. 94.

Of course, he did it without any proper authorization and that is an unlawful act. However much he loves alcohol drink, Ryotsu Kankichi is a policeman, in government service and calmly acts like that. It makes some of fun.

That was naturally in the fictional world. But there is a kind of Japanese sake brewed by a method like that self-brewing, to tell the truth. It is Horai-tsuru Harmony by Hara-honten in Hiroshima.

Where Hara-honten brews is not a public lavatory but underground rooms of a 10 storied apartment. Hara-honten had brewed since 1805. Recently it has been slumping consumption and they had decided to close their business. An apartment building was built at the site of the brewery. But Hara the president thought he liked to brew Japanese sake affirmable of himself and decided to keep brewing. No tenant came to the underground floor, so he used the floor and started brewing in 1995.

A melting room is divided by some blue tents of goretex they often use for skiwear and that looks just like a laboratory, rather than a general sake brewery. His wife and he have kept brewing Japanese sake there.

Original ferment is used and it smells ginjo aroma very much. Recommended is unheated or tepidly-warmed sake when you are drinking.
