Buri Daikon is one of the most popular dishes in Japan. I suppose you are not so difficult finding Buri Daikon at daily dish corners of Japanese supermarkets. Buri means yellowtails (Japanese amberjacks), Daikon points Japanese white radish. You can cook when you slice them, and boil together with soy sauce or miso until they becomes soft and juicy. For seasoning, we often add sugar and sweet sake at the beginning of boiling.

In fact, it is the local dish of Toyama prefecture. Really? I thought. Buri Daikon has been so common, I considered we could easily find it everywhere as long as we are in Japan. And they say Toyama has the tradition of fishing Buri over 200 years. And it is said some of Toyama people use water that's been used to wash rice, for parboiling slices of Daikon. Toyama is also well-known for their rice production.
